  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 3 cloves of garlic, minced

  • 1 red bell pepper, thinly sliced

  • 1 carrot, julienned or thinly sliced

  • 1 small head of broccoli, cut into florets

  • 1 cup snap peas, trimmed

  • 1/4 cup low-sodium soy sauce or tamari

  • 1 tablespoon maple syrup or agave nectar

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1/2 teaspoon red pepper flakes (optional, for heat)

  • Salt and pepper to taste

  • Sesame seeds and green onions, chopped (for garnish)

  • Cooked rice or noodles (optional, for serving)

Instructions:

  1. Cook the lentils according to the package instructions until they are tender but still hold their shape. Drain and set aside.

  2. In a large skillet or wok, heat the olive oil over medium-high heat.

  3. Add the diced onion and minced garlic to the skillet and sauté for 2-3 minutes until fragrant and slightly softened.

  4. Add the sliced red bell pepper, julienned carrot, broccoli florets, and snap peas to the skillet. Stir-fry for about 5-6 minutes until the vegetables are crisp-tender.
